Vietnamese Fresh Spring Rolls

Vietnamese Fresh Spring rolls (Serves 2) – These can be made as Vegetarian also, try Tofu!

Rice paper can be found in all good Asian Supermarkets.

Vietnamese Spring Roll


* These are a very healthy option for lunch, and you can mix and match

ingredients. Try Lemongrass Prawns, Green Curry Prawns or Chicken,

Tofu Satay, Seared Beef with Red Curry marinade or pop in leftover

Stirfry to use it up*



1 large cooked chicken breast (shredded)

Rice Paper

6 rice paper sheets (round)

1 small white onion

1 cup bean sprouts

1 small carrot (peeled)

1 cup white cabbage (shredded)

2 inch piece of cucumber

Half a cup mint leaves

1 cup coriander leaves



2 tbsp fish sauce

1 tbsp soy sauce

Half cup water

Half tsp chopped ginger

1 clove garlic (chopped finely)

Soaking Rice Paper

2 tbsp white sugar

Half lime juice


Mix all ingredients in a bowl,

stir well and pop in the fridge for at least 1 hour.




Mix all ingredients in a bowl.

In a wide bowl of warm water, place one sheet of rice paper at a time until softened and then gently remove and let excess water drip off.

Place sheet on a dry board and place some of the mixture vertically on the wrapper.

Sprinkle a little dressing on it and fold the bottom bit up and then fold in the corners.

Continue rolling up firmly. Repeat with the remaining sheets and serve with the delicious dressing.
